Soy Milk Concentration Measurement
Soy products such as tofu and dried bean-curd stick are mostly formed by coagulating soy milk, and the concentration of soy milk directly affects product quality. The production line for soy products typically includes a soybean grinder, mixing tank of raw slurry, cooking pot, screening machine, insulated tank, residue mixing tank, and supply system of residue and water. Soy product factories adopt two crafts raw slurry and cooked slurry to produce soy milk in general. The soy milk enters the insulated tank after slurry and residue separation, while the soybean residue undergoes two washes and is then separated by a centrifuge. The first wash water is reused in the coarse residue dilution process, and the second wash water is reused as grinding water in the soybean grinding process.

The Importance of Soy Milk Concentration
Soy milk is a colloidal solution containing soybean protein. Requirements on soymilk concentration vary in coagulation, and the amount of coagulant added must also be proportional to the protein content in the soy milk. Therefore, soy milk concentration determination is crucial in soy product production. The target soy milk concentration is determined by the craft requirements involving specific soy products. The stability of soy milk concentration is vital in the continuous production of soy products. Soy Milk Concentration Requirements for Different Soy Products
Southern Tofu requires a slightly higher soy milk concentration as taking gypsum as a coagulant. In general, 1 kg of raw soybeans could produce 6-7 kg of soy milk, with a coagulation temperature within 75-85°C.
Northern Tofu requires a slightly lower soy milk concentration for taking brine as a coagulant. In general, 1 kg of raw soybeans produces 9-10 kg of soy milk, with a coagulation temperature within 70-80 °C.
GDL Tofu requires a higher soy milk concentration than both Southern and Northern tofu, taking glucono delta-lactone (GDL) as a coagulant. Generally, 1 kg of raw soybeans produces 5 kg of soy milk.
Dried bean-curd stick: When the soy milk concentration is approximately 5.5%, the quality and yield of dried bean-curd stick are optimal. If the solid content in the soy milk exceeds 6%, the rapid formation of the colloid reduces the yield.
